Banana Oatmeal Cookies – Recipe
Here’s a quick and easy recipe to use up those last bananas that are overripe.
Ingredients:
Part 1:
1 1/2 cups sifted flour
1 cup white sugar
1/2 tsp baking soda
1 tsp salt
3/4 tsp cinnamon
1/4 tsp nutmeg
Part 2:
3/4 cup shortening
1 egg, well beaten
1 cup ripe mashed bananas
1/2 cup raisins
1 3/4 cups rolled oats
Directions:
- Sift all the ingredients from Part 1 together. Cut in shortening. Add the rest of ingredients and beat together until well mixed.
- Drop dough by spoonful 1 1/2 inches apart on an ungreased cookie sheet.
- Bake at 375°F for 12 to 15 minutes until lightly browned.
- Cool on rack.

I make a similar more HEALTHY version:
1/2 stick butter
1 egg
1/4 cup mashed banana
1 tsp vanilla extract
1/2 cup brown sugar
1/4 cup sweetened shredded coconut
1 1/2 tsp grated orange zest
1 cup whole wheat flour
1/4 tsp salt
1 tsp baking powder
1 1/2 cup rolled oats
1/2 cup raisins
Bake at 350 on buttered cookie sheet for about 15 min
