I usually post Recipe Hit Lists on Thursdays but I wanted to post this list in time for Christmas brunch. Most of these can be prepared the night before then cooked Christmas morning, a perfect solution to busy holiday mornings! It’s going to be hard choosing just one, each of these recipes look delicious :) .

  11. Mexican Breakfast Casserole: Heres a breakfast dish you can get done the night before. It seems like alot of ingredient and let me tell you, it is. But it really is quite easy. Recipe from Megan’s Cooking.
  12. The Wife Saver: The casserole is hearty but not overly heavy. It has almost a quiche-like texture, combined with salty ham, sharp cheddar cheese and a crunchy cereal topping (the Special-K topping threw me a bit as well, but it was awesome!). Really delicious.
