  1. Ina Garten’s Country French Omelet: (As seen in picture above) Fabulous country omelet with bacon, potatoes, and chopped chives. It’s such a satisfying breakfast or lunch. If you want to serve four people, double the recipe and make it in two pans. Recipe found at ABC News.
  2. Make Ahead Mother’s Day Brunch: Mushroom, Spinach & Gruyere Strata: Variations: Make the same bread and egg mixture but try different veggies and cheese: Goat cheese, sun-dried tomatoes and basil OR Canadian bacon, mushrooms and cheddar cheese. Recipe found at Whipped.
  3. Asparagus and Potato Frittata: This lower-fat frittata is a perfect choice for a Mother’s Day brunch since most of the ingredients can be prepped in advance. Serve it with a simple salad of lightly dressed spring greens and some artisan bread. If you want to live it up, check out the tasty variations that follow. The beauty of a frittata is that it can be easily altered to make use of whatever odds and ends you have on hand. Recipe found at Oregon Live Food Day.
  4. Scrambled Egg Cupcakes: You can vary these wholesome, bite-size snacks by adding your child’s favourite veggies to the mix – barely cooked chopped broccoli, diced sweet red pepper or thawed frozen peas are all good choices. If you don’t have a mini muffin pan, use a regular muffin pan, divide the egg mixture among 6 cups and bake for 20 minutes. Recipe from Canadian Family.
  5. Syrupy Banana-Nut Overnight French Toast: A great make-ahead brunch recipe. Serve with bacon or sausage and fruit salad. Recipe found at Delish.

  7. Cranberry-Cream Cheese Stuffed French Toast: Mmm, breakfast for dinner! Fresh fruit or cooked compotes make a good topping for French toast, but they work even better as a filling.
