Nice addition to dainty trays:

Chocolate Mint Sticks

Ingredients:

2 eggs (beaten)
1/2 cup margarine (melted)
1 cup sugar
2 squares chocolate (melted)
1/2 tsp peppermint flavoring
1/2 cup flour
1/2 cup shredded almonds

Instructions:

  • Combine the eggs, margarine and sugar. Beat well.
  • Add the chocolate and peppermint flavoring. Stir until thoroughly blended.
  • Add flour and nuts, mix well.
  • Pour into a greased 9″ square pan.
  • Bake in a moderate oven, 350°F, 20 to 30 minutes.

Frosting

2 TBS margarine
1 TBS cream
1 cup confectioner’s sugar (sifted)
1 tsp peppermint flavoring
2 squares semi-sweet chocolate
1 TBS margarine

Instructions:

  • Thoroughly blend 2 TBS margarine and cream.
  • Add sugar and flavoring.
  • Spread over the baked layer that has first been cooled.
  • Melt the chocolate and 1 TBS margarine together, mixing well. Spread this over the frosting layer once the frosting is firm.

Place the pan in the refrigerator and chill until the frosting and top chocolate layer is firm. Cut into strips 3/4″ x 2 1/4″.

Yield: 48 strips
