There’s something magical about a grilled sandwich, and grilling transforms tuna salad into something comfy and satisfying.   5. Grilled Chicken and Mozzarella Panini: I started out by making the bread dough. I wanted something that would compliment that flavors I planned to put on the panini.   8. Grilled Eggplant Sandwich Recipe: This Grilled Eggplant Sandwich uses the grilled eggplant I wrote about earlier. It’s a summertime staple for a quick after work dinner or even a sack lunch when I don’t feel like blowing $10 at the deli. As with all sandwiches, be sure to use good, fresh, bread.   9. Fast & Easy Dinner: Grilled Egg Sandwich: Quick cooked scrambled eggs are layered with spinach, tomatoes, and cheese. The whole sandwich is pan grilled lightly for a fantastic taste sensation. It also makes a great on the go sandwich. Recipe found at Yum Sugar.

French Dip Panini: The addition of the Gruyère and crispy grilled French bread, dipped into the richly robust au jus, really did conjure up fond memories of the French onion soup my mom used to make. Next time I might brush a little melted butter on the bread before grilling to get better grill marks, but otherwise I was incredibly satisfied with how this sandwich turned out.   12. Pesto Mozzarella Grilled Cheese: I got this idea from Tyler Florence on the Ultimate Rainy Day Episode of Tyler’s Ultimate. But he made pesto from scratch – I’m sure homemade pesto would be even better, but this is the quick and easy weeknight version & I have trouble finding fresh basil in large quantities, so I’m using prepared pesto.   13. Chicken Salad Panini: Honey-mustard flavor of chicken salad Grilled indoors, this delightful sandwich can be enjoyed any time of year. “The honey mustard dressing gives the chicken plenty of pizzazz, and the apples and pecans lend a lively crunch.” Recipe found at Taste Of Home.
  14. Monte Cristo: It is basically a ham and cheese sandwich that is cooked as if it were french toast. It is usually served with strawberry or raspberry jam or even syrup. It reminded me of the Croque Monsieur which is another way of making an interesting ham and cheese sandwich. Recipe found at Closet Cooking.

    The only time I had Monte Christos were at Bennigans, and so I copied their style of Monte Christos, which I dipped the quartered sandwiches in pancake batter. It wasn’t until recently that I found out others made them more like French Toast.

    It took me almost an hour to get through this post, because I’d check out other stuff on the linked blogs too LOL, and now I must have a Panini maker. I could learn to make Torta’s with a Panini maker I bet 8^)
