Grilling Tips: 12 Ways To Kick Up The Flavor

- Grill chicken with the skin on and rub seasonings under the skin, pull the skin off after chicken has cooked (if you prefer skinless chicken). This keeps the chicken moist and allows the seasonings to infuse the meat.
- For added flavor, remove steak from grill once it’s done then brush with some garlic parsley butter–yum! (substitute dill in the recipe for parsley).
- Brush meats and food lightly with olive oil before adding to the grill, sprinkle meat generously with kosher salt. The oil helps keep the meat from sticking to the grill, the salt tenderizes the meat as well as adds flavor (also see How to Turn Cheap Choice Steaks into Gucci Prime Steaks).
- Help your meats retain their juices by not jabbing them with forks when turning, use tongs or a metal spatula instead. Dried out steak is not tasty!
- Before adding meats to a marinade, set aside a small portion in a covered dish & refrigerate. Use this bit of marinade to baste the meats while grilling (rather than the batch you used to marinate the meat in–safer/food contamination).
- Allow the cooked meat to rest for about 5 minutes before cutting or serving, this helps the juices get reabsorbed back into the meat.
- Soak some fresh herbs and citrus rinds in water for a few minutes then add to the grill–toss the herbs on top of coals or if using a gas grill, put the moistened herbs on a grill and lay food items over top. This infuses extra flavor into your food while cooking, experiment with herbs to discover your favorites (try basil, rosemary, oregano, thyme, lavender are a few ideas).
- Try flavoring with wood smoke: Soak wood chips (hickory, apple, etc.) in water then add on top of coals. If you have a gas grill, wrap the chips in a foil pouch, poke a few holes on top and lay over a burner. The wood smoke will add a smoky flavor to your grilled meats.
- Don’t add BBQ sauce or a sugar based sauces to meats until shortly before done, this helps prevent the sauce from burning and keep the sauce lip smacking good.
- Wrap fish, steaks, burgers with strips of bacon to add flavor and keep meat moist.
- If you like tender, juicy ribs where the meat just falls off the bone, slowly boil ribs for a couple hours before adding to the grill, add several cloves of garlic to the water. Brush with BBQ sauce on the grill.
- Try stuffing hot dogs and sausages with peppers and onions when grilling, simply split the meat lengthwise (not all the way through) and fill, then wrap & tie closed with water soaked heavy string.
