I remember when I first came across the “hash brown casserole” phenomenon…it was 20+ years ago, I was newly married in a new apartment and scrambling for ideas to cook for my husband (who turned out to be a fussy eater…and that meant nothing too fancy!). Someone at work slipped me this recipe and I understood it was a side dish for dinner (but couldn’t quite believe it would so delicious). Since then I’ve discovered it’s a popular breakfast dish too, so it seems anything goes with this easy (and cheesy) dish.
