Homemade Chili Sauce

Recipe #1

Ingredients:

36 ripe tomatoes
6 medium onions–covered in 2 TBS salt
12 apples OR 12 pears, peeled and diced
4 cups brown sugar
1 cup diluted vinegar

Spice Bag:

1 TBS allspice
1 TBS cinnamon
1 TBS cloves

Directions:

  • Sprinkle onions in salt and let stand for one hour.
  • Boil all ingredients (including spice bag) for 2 hours, carefully. Bottle.

Recipe #2

30 ripe tomatoes peeled
6 large onions, chopped
6 peaches, chopped
6 pears, chopped
5 cups sugar
3 cups vinegar
3 small red or green peppers, chopped
2 TBS salt
2 TBS mixed spices (in spice bag)

Directions:

  • Mix all ingredients together. Place spices in a bag. Boil everything until thickened, at least one hour. Stir frequently while boiling. Remove from heat and store in sterilized bottles.

Recipe #3

20 large tomatoes (ripe)
4 peaches
4 pears
4 onions (large)
3 cups sugar (white)
2 1/4 cups vinegar
3 TBS pickling salt
3 TBS pickling spice (tied in bag)

  • Peel tomatoes and cut up all ingredients. Add sugar, salt, vinegar and pickling spice bag. Cook for about three hours, stirring frequently.
