Homemade Potato Chips Recipe
Today’s feature is another great recipe from Elise.com with Oven-fried Potato Chips Recipe:
These crispy thin potato slices are just divine. I call them potato chips because they taste like the best potato chips you will ever have. But I suspect that one might not classify them as a chip given their 1/8 inch thickness.
The recipe is from Gourmet magazine and it calls for 4 russet potatoes sliced 1/8 inch diagonally, 1/4 cup melted butter to brush on the slices and coarse salt sprinkled on after they’re done cooking (500°F oven for 15 to 20 minutes).
I preferred the comments area suggestion of using extra virgin olive oil instead of butter. I love butter (probably too much!), but EVOO is great too so I had no problem making this sacrifice at an attempt to make the snack a little healthier.
Another suggestion was to use herb infused olive oil for more flavor and less chance of herbs burning up in the oven (great tip) and a tip to first soak the potato slices in water to get rid of much of the starch as well as making the chips crispier.
Great recipe and excellent tips shared, I also love the idea that these are oven baked instead of deep fried–eases the fat load a bit
