Today’s feature is a video I found on Youtube detailing how to make enormous, fluffy omelets:

Quick Recipe Directions:

  • Start slowly browning your favorite omelet toppings in butter (mushrooms, onions, peppers, etc.)
  • Separate 4 eggs and beat the egg whites in 1/4 cup water until stiff
  • In a separate bowl, beat the egg yolks with salt & pepper until creamy
  • Fold the yolks into the egg whites (gently, don’t overdo)
  • Heat 1 TBS butter in skillet and preheat oven to 325 degrees
  • Pour the eggs into the skillet and heat for 5 minutes (medium heat)
  • Stick the skillet into the oven for 6 minutes
  • Pull out the skillet and cover the eggs in cheese and meat filling (precooked & heated ham cubes)
  • Stick the skillet back in the oven for another 6 minutes
  • Remove from oven, fold over the omelet, sprinkle on some cheese and pile on the toppings

I never seem to be able to turn out a great omelet, too rubbery, overcooked, undercooked, bland–I love them though and keep trying. This method is definitely next on my list, YUM!
