How To Freeze Rhubarb {Plus Recipe}

  • Choose early spring rhubarb of good color.
  • Wash and cut stalks in 1 inch pieces. Boil for one minute then cool quickly in ice water. Drain.
  • For every 4 lbs rhubarb, mix in 1 lb. sugar. Pack into plastic containers and freeze.

Use for pies and sauces.

Rhubarb Crumble Crust Recipe

Ingredients:

3 cups diced rhubarb
3/4 cup sugar
1/4 cup water

Crumble:

1 cup brown sugar
1 cup flour
1/2 cup butter

Directions:

  • Mix together the rhubarb, sugar and water. Place in baking dish.
  • Mix together the crumble ingredients until crumbly. Spread on top of rhubarb and bake in moderate oven 350 degrees F. about 40 minutes.
  • Serve hot or cold with cream or ice cream.

*If using diced rhubarb from frozen (top instructions), no need to add sugar to the rhubarb before placing in baking dish.

    you have the wrong photo. Your article is about rhubarb. The photo is of rhubarb chard, named because it is the color of rhubarb, but a completely different plant. The leaf is much larger and a different shape.

      Thanks steve, I should have known. I looked and looked and looked at that picture and felt something was wrong, but went with it anyway. New pic now posted, thanks a lot for your help :) .
