For some reason I seem to crave freshly baked homemade muffins in the Fall. They’re a warm comfort food on chilly mornings, great for breakfast or snacktime and not fussy to make. Here are 12 different recipes I’ve found online this week that caught my eye, a few are even healthy! I hope you enjoy them too

Strawberry Muffins with Pecan Crumble Topping: The muffins are best eaten the day they are made, but they can be tightly wrapped in plastic wrap and kept at room temperature for 2 days. For longer storage, wrap in plastic wrap and refrigerate for up to 5 days, or freeze well wrapped in plastic wrap and then aluminum foil for up to 3 weeks. Defrost still wrapped at room temperature. Found at Stephanie’s Kitchen.- Awesome Banana Muffin Recipe: These are by far the EASIEST and BEST Banana Muffins I have ever tasted! They are also 100% “fool-proof” which makes them all that much better! - Almond Poppy Seed Muffin: Buttermilk is lighter than sour cream so I upped the butter a bit to 4 tablespoons (which is still pretty low) and kept the sugar at a half cup making a muffin that I can guarantee is better for you than one of those Costco behemoths. Though “better for you” is a relative term, since these aren’t exactly saintly diet muffins either. Recipe found at Nook & Pantry.
- Recipe: Mini Blueberry Lemon Muffins: Everyone needs a basic blueberry muffin recipe, especially since it’s surprisingly hard to get a good one in the average cafe. They’re often too cakey or sweet. These are light and fluffy, and just sweet enough to be a muffin – not a cupcake. Found at The Kitchn.
- Delicious Pumpkin Muffin Recipe: This time of year, we always ask the question, what to do with all those pumpkins? Here is a great recipe that actually calls for freshly shredded pumpkin (not that stuff in the can). Found at MarloElaine.
- Whole Wheat Orange Spice Muffin Recipe: The thing that’s so great about these muffins is that besides tasting great, they are actually pretty healthy too. They are made with 100% whole wheat flour and have the added nutritional benefit of ground flax seeds and walnuts. Each muffin provides you with 5 grams of fiber and 8 grams of protein so they will keep you feeling satisfied much longer than a traditional store-bought muffin. Found at Pinch My Salt.
- Apple Spice Muffins: I have never known anyone who did not absolutely love these muffins. The cool thing about them, and what my mother liked so much with a large family to feed, is that you can use any type of apple and it makes no difference – they will still be just as good. You can also use those apples that are starting to get a little soft and running out of their shelf life. They work great in here and no one will ever know. Found at Southern Plate.
- Banana Pecan Muffins: They turned out delightfully moist and flavorful, and the banana and pecan pairing is just perfect — generations of bakers can’t be wrong. I like them best fresh out of the oven (after the necessary cooling down), before their inimitable crusty hat turns soft. But you can refresh them the next day by returning them into the warm oven for a couple of minutes. Found at Chocolate & Zucchini.
- Black Cherry Sour Cream Muffins: While this recipe probably would make excellent muffin tops if you have a specialty muffin top tin, even the “stumps” of the muffins are tasty. They have a good cherry flavor and a slightly dense, but tender, texture. Combined with the little crunch of sugar on top, the muffins had a coffee cake-like feel to them. Found at Baking Bites.
- Orange Berry Muffins: The blueberry and orange flavours were perfectly balanced and the muffins were just the right sweetness. The muffins were very easy to put together and I love that the recipe uses melted butter instead of room temperature butter, meaning you can bake them on a whim! Found at Eat Me, Delicious.
- Baked Oatmeal Muffins: This recipe is credited to my mom who suggested that I make baked oatmeal in mini muffin tins so that they will be even easier to grab and eat on the go… My mom and dad have become addicted to these, so I think this will be a weekly recipe that I will have to bake! However I am going to alternate my choice of fruit… instead of apple + raisins, you could use bananas, pumpkin, etc. Found at For The Love Of Oats.
- Zucchini Carrot Muffins: This is a great way to use up carrots, zucchini and apples. These freeze great, but I can’t get my kids to eat these…..big babies that they are. Now there are a lot of ingredients, but once you get them measured out etc., you’ll find it goes together in minutes. Found at That British Woman.
