18 Potato Salads To Try
I fired up the barbecue for the first time this year (the weather has been unusually nice lately) and now I’m on the hunt for this year’s first batch of potato salad–I’m looking for something new to try. This week’s Recipe Hit List is a great selection of recipes I’ve found around the ‘net, some even healthified! You’ll find old-fashioned favorites & classics mixed in with new twists along with hot and cold versions. Something here for everyone, enjoy!

- Lemon & Herb: (as seen in picture) I’ve never been a big fan of potato salads but I happen to really like this one. The key this potato salad is the lemon. Lemon adds just the right amount of freshness to the creamy dressing. I like to use red potatoes because the pink colour is lovely in this salad and there is no peeling involved. Perfect for when I’m feeling a little lazy.

- Russian: I suppose I should now tell you what’s included in this salad: potatoes, carrots, canned green peas, eggs, pickles, mayonnaise, onion (optional), Granny Smith apple (optional), and dill. There are quite a few variations on the basic theme: you can add defrosted peas, boiled chicken, even hot dogs! - Creamy Dijon-Dill: This potato salad is so incredibly flavorful and is great to bring to parties. When picking a potato, I recommend small red potatoes because they hold their shape better after they are cooked. Found at Cocoa And Cheese.
- German Style: I always thought of this more as a cold-weather kind of dish. But someone suggested it to go along with kielbasi, and it sounded like a great idea. It’s actually easier to make than “regular” potato salad, and is also pretty good cold. From How To Cook Like Your Grandmother.
- Zesty: Chunks of red potatoes, Dijon-style mustard and green beans combine with sliced green onions to create a delicious and colorful salad for a luncheon, a church supper or pot-luck gathering. Serve in lettuce cups for a pretty presentation. From Very Best Baking.
