i always put a knifeful of mayo on the inside of the sandwich and then put my cheese on and grill as usual with butter on the outside.  the mayo on the inside makes the cheese creamier.  one other thing i like is to make a grilled cheese the above way and make a half grilled cheese (just one piece of bread with cheese) and then put the two together.  so you get a double-decker with a crunchy piece of bread in the middle.  yum!  i like the tomato idea.  gonna try that sometime.</description>
