Raspberry Thyme Vinegar Recipe

4 cups white wine vinegar
2 cups raspberries (fresh or frozen, thawed)
1/4 cup sugar
4 sprigs fresh thyme (or 1 tsp dried)
1.5L jar, sterilized with lid

Directions:

  • Mix all ingredients in a large sterilized glass jar, seal and let stand at room temperature (in dark) for 2 weeks. Shake occasionally.
  • Strain the mixture, discard fruit and herbs. Strain again through cheesecloth.
  • Pour vinegar into clean, sterilized jars and refrigerate.

Use within 4 weeks.

Raspberry vinegar can be used on salads or drizzled over roast meats. More flavored vinegars: Lavender Vinegar Recipes, Homemade Rose Petal Vinegar Recipe and Multipurpose Herb Vinegar (these vinegars can be used as beauty aids and cleaners too!).
