Rice is a perfect side dish for dinner since it’s cheap & easy to make, but it needs a little help in the flavor department. Here are five quick recipes that don’t involve a bunch of preparation and bonus: everything is cooked in one pot!
5 Quick & Easy Ways To Spice Up Rice
- Coconut Rice: 1 1/2 cups water, 1/2 cup coconut milk, 2 TBS chopped & shredded coconut, 2 tsp honey, 1/2 tsp salt, pinch of allspice.
- Curried Rice: 2 cups chicken broth, 1 tsp curry powder, 3 TBS dried currants.
- Ginger-Soy Rice: 2 cups water, 2 tsp soy sauce, 2 tsp grated fresh ginger, 2 whole cloves.
- Lemon Rice: 2 cups water, 1/2 tsp salt, 2 strips lemon zest, pinch of nutmeg.
- Saffron Rice: 2 cups vegetable broth, pinch saffron.
Directions:
- Combine ingredients and bring to a boil then add 1 cup of raw rice. Reduce heat to low, cover, and simmer until liquid is absorbed (about 12 minutes for white rice or 40 minutes for brown rice).
- Remove from heat and allow to sit covered for about 10 minutes. Fluff rice with a fork before serving.
